Convection ovens are considered to be efficient because the heated air is continuously circulated around the food being cooked. Thus, this reduces the required cooking temperature and cooking times. The American Council for Energy Efficiency states that with convection ovens you will save about 20% of energy.
Typical ovens heat the food from either the top or the bottom. The hot air will rise in the oven, making the cooking inefficient. A convection oven, however, has a fan that keeps the hot air circulating, getting rid of the layer of air that separates the food from the hot oven air, thus making the cooking process more effieient.
