Lack of supply, rarity … however you want to look at it, caviar is expensive because it’s hard to get. Caviar is essentially the fully ripe internal ovaries or egg masses of sturgeon – a fish species that has been so overfished that only two varieties are currently not endangered. Some caviar is made from other fish species like salmon or whitefish, but is not as prized as sturgeon caviar. The three main types of sturgeon caviar (what is known as simply “caviar”) are beluga, sevruga, and osetra. Beluga caviar is the most expensive and is made of the largest eggs.
