If you are refering to land animals, I believe that is the American bison -which is the state animal of Kansas. The American bison is the largest extant land animal in North America, so I assume that it would be the largest state animal as well.

The American buffalo, otherwise known as American bison, became the official state animal of Kansas in 1955. It’s size makes it the largest state symbol in the United States, as well as the largest land animal among all others in North America. Males can reach a height of six feet tall and weigh between 1000-2000 pounds. Females stand at about five feet tall and weigh between 800-1000 pounds.
