Canned tuna tends to be Albacore or light tuna, which is of the Skipjack variety. Often what you will find in sushi is Bluefin tuna, the most endangered type of tuna fish, but this is not usually canned. You can buy solid or chunk canned tuna in either oil or water depending on your preference. However, Albacore has higher mercury levels than light tuna, and Bluefin has the highest mercury level of all three.
