What kind of potatoes are used for potato chips?

Potatoes come in so many varieties that it is hard to keep track of them all. However, some are better for chips than others. Commercially processed potato chips from large companies might actually be made from several varieties of potato, especially since some potato varieties grow better in certain locations than other potato varieties and may be transported long distances before they reach the factories. You can also make more environmentally friendly potato chips at home by finding out what variety of chip potato is grown nearest to where you live so that the ingredients are not transported long distances.
