What kind of bears are used for the dancing bears?

If you are referring to the “dancing bears” used by the Grateful Dead, I don’t think there was a specific type of bear they were mirrored after. The bear is a reference to Owsley “Bear” Stanley, who recorded and produced the album. A series of stylized dancing bears was drawn by Bob Thomas as part of the back cover for the album History of the Grateful Dead, Volume One (Bear’s Choice).
