The American Heat Association suggests that no more then 3 or 4 egg yolks should be consumed in a week. This is because eggs tend to have a large amount of cholesterol in them. They have plenty of protein and other nutrients too, but egg yolks in particular contain a large amount of cholesterol. Another source (maybe biased), the Egg Nutrition Center, recommends about an egg a day intake is a healthy amount. They cite that the bad rap eggs get is because they are often consumed with other high cholesterol breakfast foods such as hashbrowns, bacon, sausages, and other heavy breakfast foods.
Recently, the recommendations for egg consumption have been relaxed. According to WebMD, the American Heart Association issued new guidelines that an egg per day is safe to consume by normal healthy adults.
