Grilling meats produce cancer-causing compounds. When meat is grilled, the animal fat drips down and carcinogenic compounds rise with the smoke and are deposited on the meat. Gas grills are usually a better bet than charcoal though, since the soot in coal has air pollutants and microscopic solids.
