What happens when a species is pressured?

Pressures such as scarce food or changing habitat cause species to evolve.  An example can be the long neck of a giraffe.  Imagine you have some short necked and long necked giraffes.  If food on the ground becomes scarce they will have to eat from the trees.  Those giraffes with the longest necks will be able to reach more leaves, and will survive longer to pass on their genes.  Due to this evolutionary pressure, giraffes will have longer average neck lengths than thier predecessors.
