The green material is the lobster’s digestive system. Some people seem to like to eat this, but its probably best to avoid it as this is where any pollution would have accumulated in the lobsters body.
The answer to my question was helpful but I am still left wondering if there is a specific term used for the green mass inside the lobsters body? Is it just considered the digestive system?
More specifically, it is the liver, also referred to as the tomalley in lobsters. (http://www.livelob.com/website/faq.aspx) Hope this helps.
