What does pasteurization do for milk?

    Milk, though considered very healthy, contains bacteria that could be potentially harmful.  The pasteurization process is to sterilize the milk.  In the pasteurization process, milk is heated to 161 degrees for 15 seconds.  A newer mathod called UHT, is when the m,ilk is pasteurized using ultra high temperature for just a couple seconds.  This process allows it to be shelf-stable for up to 8 weeks.
