What does it mean when a food is ‘gluten free’?

         Gluten is a name for the proteins found in wheat, barley, rye, and triticale. Gluten-free products do not contain the protein. Most people don’t need gluten free products but for people with celiac disease, an autoimmune disorder, gluten can cause serious health problems. Avoiding gluten completely is the only treatment for the disease.

    Gluten is a protein found in rye, wheat, barley, and other grains. So food products without this protein are gluten free.

    On a similar note, foods that are truly gluten free are not made on the same counter, fryer, oven, etc (or if they are they need to be thoroughly cleaned first) and they aren’t processed with foods that have gluten. We call this cross contamination. As someone with celiac disease, it’s very important to make sure something is really gluten free and doesn’t just lack that in its ingredients.
