Surprisingly dandelions are edible. In fact, all parts of the plant can be eaten, although the leaves are the most widely used. That being said, dandelions are said to have the taste of other lettuces with somewhat of a ‘bite’. People liken the taste to chicory and endive, with more of a hearty tang. They can be boiled (as you might do to spinach) or used to top off salads for a colorful AND flavorful topping. They can also be roasted and used as a coffee-substitute or boiled and/or stir-fried as you might any other vegetable. Although I’ve never seen it, dandelions can also be made into a wine.
