Good question, krause. The biggest difference between baby back ribs and short ribs is what animal they come from. Short ribs are a beef cut(cow), and baby back ribs are a pork cut(pig). A short rib is usually about 3 or 4 ribs, whereas a baby back rib is 10 to 13.
