The biggest importers of swiftlets’ nests to make bird’s nest soup, a traditional Chinese delicacy, are Hong Kong and the US. You might find the most “authentic” soups in China and surrounding Asian countries. If you’re looking for it in the US, established Chinatowns on the west coast such as in San Francisco might be your best bet. You can also buy the bird’s nests themselves and try a recipe, which are primarily composed of swiftlet saliva and can be white, red or black depending on the minerals available to the bird.
