Allergies are the hypersensitive reaction of the immune system to the exposure of allergens (pollen, dust, dander) or reaction to food sensitivity (peanuts, seafood, shellfish, etc…). This hypersensitivity is characterized by over activity of mast cells and basophils (types of white blood cells) triggered by an antibody called IgE, and this typically results in an inflammatory response (rash, sinus irritation, coughing and breathings issues, etc..). Allergies are genetic and typically hereditary, however it has been observed that pollution, sustained exposure to allergens, or changes in diet can create allergies in humans.
