Tofu requires a lot of work to be processed as it has be converted from beans into tofu that stock the shelves of grocery stores. Soybeans have to go through rigorous processing, which can increase tofu’s carbon footprint by a lot.
It can also depend on whether the tofu has been sustainably grown and harvested or genetically engineered prior to processing the soybeans into tofu. Sustainable practice will have less of a carbon output then genetically engineering on a mass production scale.
