what breaks down products

It depends of what kind of products you are talking about.  If you’re talking about food, it’s usually mold.  If you’re talking about compost, a combinations of worms, bacteria, and other living organisms can break down the products.  If you’re talking about products in general and their molecular structure, it’s radioactive decay that breaks down the product.  Everything in the Universe is slowly decaying on subatomic level.  Different items have different times of radioactive decay.  Products with a high level of radioactive decay are labeled unstable and can be dangerous (such as platonium and uranium). Hope this answers your question.
