One of the biggest changes I had to make when I began eating vegetarian (something I have not 100% committed to) is getting over the mindset of having an “entree.” Omnivores often think of dinners in terms of a meat and two sides. Although you can replace that meat with with tofu or a meat substitute, I have avoided that. So for me it was trying to figure out how to eat a satisfying meal that had more than one flavor and texture in it. I began with eating a lot of rice and beans and pastas, but soon I got tired of “one pot meals.” Now I’ve realized that a meal comprised of just sides can be incredibly satisfying–I don’t need an “entree.”
