“Sulfites are sulfur-based preservatives used to prevent or reduce discoloration of light-colored fruits and vegetables, prevent black spots on shrimp and lobster, inhibit the growth of microorganisms in fermented foods such as wine, condition dough, and maintain the stability and potency of certain medications.”
To add onto what intothebackcountry said, sulfites do not usually affect people (most people cannot tell if they are eating sulfites or not). However, people with allergies to sulfite are particularly sensitive to them, same with people with asthma.
Some examples of foods that contain sulfite are: wine, molasses, dried fruits, grape juices, etc.
