Fruits and vegetables should always be washed. They can possess residual dirt, pesticides, chemicals, bacteria and the health risks are greatly lowered when washing them. People have been known to experience food poisoning and there was a recent outbreak of E. coli from unwashed spiniach in 2006.
You might not have gotten rid of some of the bacteria that might have formed, either in growing or in travel. This can lead to sickness, ranging from a small stomachache to something more serious. There may also be dirt or fertilizer on unwashed vegetables, which can produce similar results.
