Currently there are several materials used for this purpose in solar thermal power plants. This includes high-pressure heated up steam, molten salt (mix of sodium and potassium nitrates, known as saltpeter), and graphite, with molten salt being the favorite. There are also many materials whose phase change is used to store the heat, including both organic and inorganic materials, such as hydrate salts.
