What are some explanations as to why societies make disastrous decisions when it comes to their environments?

I think the biggest one is the profit-motive and general lack of respect for the environment. A lot of humans see the environment at their disposal and don’t feel a need to renew or take care of things. If people can do something that drains the environment but saves or makes money, they tend to do so. Only recently have we begun to see that the gravy train is running out with resources and destructive decisions will breed negative repercussions. In many cultures (not all, but many of the largest ones), we need to cultivate respect for the environment in order to make any changes.
