I’m sure there are hundreds, if not thousands, and beauty is in the eye of the beholder so I don’t know who would be interesting to you but there are collectives like Earthartists.org that advocate environmentalism through art and use natural materials in the process. Wikipedia also has an article that links you to some people as well.
Andy Goldsworthy has created breathtaking artwork out of mediums found entirely in nature. He creates them so they give back to nature as well, so he isn’t depleting the ecosystem of its resources. Check out his website… he’s incredible.
One of the most interesting uses of natural materials in art is the work of photographer Carl Warner, who did a serious of still-life photographs in which everything was made of food (appropriately called “Foodscapes”).
