If you cook food above 116 degrees F, then many enzymes are killed. The claimed benefits of a raw food diet include: more energy, better digestion, improved complexion, reduced risk of heart disease and weight loss.
Often you avoid many common allergens, such as gluten, dairy and soy. This leads to less inflammation and hence a healthier sense of well being. You are also consuming less saturated fats, which are associated with health problems, since fruits and vegetables contain little, if any, saturated fats.
