There really are no benefits to not eating vegetables. They have so many nutrients that we require. Although fruits contain all the vitamins we need, the amount is so small that you still need to eat your vegetables.
Vegetable oil is considered unhealthy contrary to popular opinion. I agree with duckyduh regarding vegetables, however, I would add that vegetable oil is not a good option. Butter, olive oil, and coconut oil are the best oils for cooking. The Weston A Price foundation is an amazing resource for nutritional information.
Duckyduh and davidambrose both make very valid point about the importance of eating vegetables (Vegetable oil does not count as eating vegetables). But in addition to the vitamins and minerals available to us through eating vegetables, vegetables are also high in important dietary fiber. We need fiber to help us digest our food and keep our gastrointestinal tract healthy.
It is important to eat a wide variety of vegetables of different colors, but if there are only a few vegetables you like then that’s better than no vegetables at all. You can also try mixing your vegetables in with other foods so you don’t have to eat them plain – add them into pasta, sauces, soups, etc…
