Although they contain spinach, green tortillas are not significantly healthier than plain flour tortillas. If you’re looking for a healthy tortilla, choose one made with whole grains or whole wheat. They may not be as tasty, but they don’t contain (or don’t contain as much of) the enriched wheat flour. Enriched flour is enriched with extra nutrients, but not enough to replace those that are lost in processing. Thus, your body absorbs the calories but still craves more nutrients. When you’re eating enriched flour, you’re consuming more calories but not using all of the energy. To get more energy from your food, choose whole grains.
