Before we had refrigerators and freezers how did we make meat last longer?

    Salting, smoking or pickling meat helped preserve it before refrigerators or freezers. Much meat went bad quite quickly, and that is why the spice trade was so popular. It masked the taste of the spoiled meat with the flavors of the spice.

    Salt, usually.  However, salt was expensive for many.  Therefore only the rich could do so.  In many situations, people would just use spices to cover up the taste of rotten meat.
