Hazelnuts ripen during the autumn season-September, October, or November. If the nut has dropped from the tree it is fully mature and ripe. However, the hazelnut must be cured and dried to 8-10% moisture content before consumption. This is done by filling a bowl with water and submerging the nuts. Remove the nuts that float, because those are empty shells. Once this is done you want to arrange the nuts on a wire screen and place them in the shade. Inpsect the nuts regularly over the course of two to three days for color and texture changes. They are dry and ready to eat when they are firm and cream in color.
