During the fermentation process yeast is added to the juice from the grapes in order to turn it into alcohol. However, if the temperature is too high the yeast won’t work properly, and thus cooling coils are often used to keep the temperatures low enough. If oak barrels used in the fermentation process, then an even lower temperature is necessary. Rooms need to be maintained at a constant low temperature, and if this can’t be done naturally (underground), then a cooling system is required.
