I am not entirely sure what would make soy one of our most global crops. Sure, its health benefits are advocated heavily by the media (including a number of recent scientific studies stating soy’s influence on dangerously high levels of estrogen and chances for cancer), and soy has been utilized by a number of cultures (primarily Asian cultures), but I’d venture to say that there are a number of crops of much more importance than soy. I would assume rice is the most important (ie widely utilized, imported/exported and converted) crop available on the planet, as every single culture/religion has eaten rice throughout history.
