Some glazes used in pottery are not suitable to use on anything that might touch food or drink. What is in them?

Some pottery glazes contain metals like lead and manganese, which are themselves poisonous. Certain glazes that contain copper have the effect of increasing the solubility of lead. Iron is a safer material to use as a pottery colorant.
