Although proteins are more difficult to break down than starch, they are easier to break down (into component amino acids) than fats. This makes proteins relatively difficult to break down, when compared to starch, and relatively easy to break down, when compared to fats. Also, how difficult protein is to digest depends on the protein source. In general, protein from plant sources are easier to break down than protein from animal sources.
