It can be dangerous to eat. Trichinosis is a food borne illness that is caused by eating meat, specifically pork, that causes roundworm infections which grow in one’s intestines. If you are going to eat it, eat cooked, ground pork. Smoking, salting, or drying it does not get rid of the roundworms.
The answer to your question is yes and no. According to Food Renegade (2011), the debate has been ongoing as to whether pork is healthy for consumption or not. Interestingly, the primary influences of this debate base their arguments on religious beliefs. A study was completed by the Weston A. Price Foundation (2011) that found traditionally prepared (uncured) pork (bacon, ham, sausage, etc.) can contribute to a healthy diet if eaten in moderation. The study however warned against the consumption of unmarinated pork as it aggregates the red blood cells and can cause disease (The Weston A. Pice Foundation, 2011).
Eating pork in moderation seems fine, but as the others have mentioned, there are some risks that may be associated with it. It’s important to make sure that you are properly handling and cooking the pork, to eliminate any chance of disease or illness.
