Can you pick the seedhead when they are green and dry out the seeds in the house?
You will want to wait until the seed head is brown before you try to pick the seeds and dry them. When the seeds are green they are still developing and not ready to leave the plant.
Once the seeds are brown, collect them and dry them on tin foil (so you can easily pop them off later). Once they are dry, keep them in a sealed container until you are ready to plant them. It is likely that not all seeds will grow as some may not dry properly or may be damaged (this happens in nature also).
