My car’s fuel economy recently went down by 10%, right after we had a sensor replaced – how could those two things be related?

It could be that your old sensor was broken, hence you having to replace it. If you did nothing else to the car, then your car is probably still running the same way. If you changed anything else, did a tune up, or altered the way you drive/where you drive, then that could possibly account for the change.
