the main stem of my apple tree appears to be dead but there is a big side shoot which still gives plenty of apples each year. However, this branch is almost hanging on the floor, should I prop it up or prune it after the crop ?

I would prune it. That will help even the tree out, most likely, and can also increase production. Propping the branch will work for a little while, but ultimately, pruning is better, in my opinion, at least.
