In general, poultry like chicken and turkeys tend to have a much smaller environmental impact than mammals in the meat industry – so the turkey would come out ahead of ham as the greenest choice. However, both ham and turkey have a much smaller environmental impact than beef industry. By most measures, beef is far and away the worst choice for the planet when it comes to non-seafood meat products. The next worst meat after beef seems to be lamb, followed by ham or other pig meat, and finally poultry.
