If shark fins don’t really have any flavor why is there a soup made from them?

The expensive delicacy of shark fin soup has been made in China for so long that it is often considered a cultural must-do. Despite its lack of flavor, thorough cooking makes the fin separate into threads of cartilage that resemble clear noodles. This may account for its popularity, although it is also believed by some to be an aphrodisiac or to have health benefits.

Shark fin soup is mainly seen for its rarity and elaborate prepartion. It’s  used for ceremonial purposes like weddings, banquets and important business deals. It seems to be more of a social status symbol than a satisfying meal.
