If a lake did not turn over, the bottom would be deprived of oxygen.  Fish and other small water dwelling organisms rely on the turnover to replenish the oxygen in the deeper parts, since this is where they spend the winter once the top freezes over.  Without a new oxygen supply and no surface disruption because of the ice, many aquatic animals would suffocate in the winter.  Turnover also distributes nutrients throughout the water.
