Yes. The changing color is simply sexual dimorphism, they change color to attract a mate.
The further a salmon gets on its journey upstream, the less tasty it is going to be. Salmon don’t live well in fresh water, and they don’t eat much during their migration so the meat won’t be as tasty. But the color doesn’t necessarily indicate anything about the meat, and a salmon is never UNSAFE to eat, just maybe not as tasty.
