Mushrooms (a fungus) are mostly water – about 90%. This makes them extremely low in ‘bad’ nutrition like sodium, calories and fat … they contain about 100 calories per ounce. That’s kind of what mushrooms are all about – nothing! They do have a small percentage of fiber, and are good sources for riboflavin, niacin, and selenium. Many types, including the white button mushrooms we usually see on salads and in soups, have shown tumor-reducing effects on cancer patients – and Asia has used shitake mushrooms to ward off cold/flu for centuries.
