I am wondering about the harmful byproducts of degrading plastics if used in home construction materials.

Unless you plan to use biodegradable plastics such as cellulose or starch based materials, most petrochemical based plastics will not degrade in our lifetime. In fact there have been many attempts to use plastic bottles in home design and construction. Plastics tend to only degrade in industrial plants under precise conditions and so they should not pose a problem in construction. However construction with recycled plastic is not a viable option at the moment because of the extensive costs in degrading and separating the additives from the desired plastics.
