That depends on the specific herbs in question, on the local conditions, and how you harvest them. Obviously, you never want to pull herbs out by the root if you want them to keep growing. Some herbs, such as basil, need to be “pinched off” to keep them from flowering if you want them to continue to grow.
If you keep an eye on the general health of your plants, you should get a sense of how much you can manage to take from it at once without over-straining it.
