The process is fairly simple. The olives are harvested and then cleaned. In an olive mill they are ground and mixed to make an olive paste. The paste is then pressed to squeeze the liquid out. The liquid is put in a centrifuge to separate the oil from the water and then the oil is bottled. How this process is executed various between traditional producers and commercial manufacturers.
The olives are washed, sliced, and then pressed to extract the oil. The highest quality olive oil is extra virgin olive oil (EVOO), followed by virgin olive oil, and then plain olive oil.
