It depends on the age and breed of the cow, but on average, about 2 years. By this age they are fully grown and well muscled. Dairy cows are butchered later in life, because they reach sexual maturity around 1.5-2 years. At this point they are bred to produce a calf, and for some time after that produce milk. After they stop producing milk (around 4 years) they are butchered.
