According to some research water use in wineries can be anywhere from 1.5 gallons of water per gallon of wine all the way to 20 gallons of water per gallon of wine. There is great variation in the amount of water used by different wineries. Older wineries are not designed to be water efficient and so usually use more water than newer wineries or wineries in areas that are particularly dry (like some of the wine country in California).
