how much salt is left over in the water from desalination plants?

Most desalination plants use reverse osmosis technology. Reverse osmosis desalination uses a special synthetic membrane to filter sea and groundwater. Depending on the type of membrane, RO desalination can remove anywhere from 60-99.9% of salt, organic material and other undesirables.

RO desalination’s by-product, brine, is a heavily concentrated salt solution that contains more than 35,000 mg/1 dissolved solids.
