Most estimates claim that “vampire” energy use, from plugged in but turned off appliances, is about 4-10% of the total use. It doesn’t make much difference whether you leave them plugged in or unplug them, maybe $20 dollars over a year. At the same time, it doesn’t cost you anything to unplug them, and it costs you money to leave them plugged in. I see no reason not to unplug and save yourself money.
