How many people in America are on a gluten free diet?

    In a 2008 article it was reported that 15-25% of consumers are buying gluten-free foods. Gluten intolerance is on the rise, and many people suffering from celiac disease go undiagnosed. Thus, those undiagnosed people are cutting out the gluten in an effort to “cleanse” the body or to see if any health issue might be helped through dieting.
